Secrets to Enjoying Gluten Again
I am always amazed at how traditional cultures developed successful techniques to help them enjoy the tastes and benefits of wheat and gluten. Sourdough bread is one of them. The culture of the sourdough goes through a fermentation process that breaks down the gluten protein and renders it much easier to digest. So look for good quality sourdough bread and toast it for added digestibility.
Other steps to improving your digestive fire:
Ayurvedic Digestive herbs for your constitution.
Soak Oats (or other cereal grains) overnight before cooking them for breakfast.
Soak grains like barley and bulgur before turning them into a delicious soup, casserole or stew.
Winter is the best time to eat wheat because the digestion is strongest in the winter.

Do a Fall Cleanse to reset your digestion
Digestive Tea Recipe
2 cups water
1 teaspoon each of coriander seeds
1 teaspoon fennel seeds
1 teaspoon cumin seeds
This tea is good for all constitutions, vata, pitta and kapha. It is also good all year.
*It is best to dry roast the spices to bring out the aromas and flavors of the spices. Place them in a hot pan and continually stir so the spices do not burn. Once you begin to smell the aroma of the spices it is done.
Bring the water to a boil. Turn off heat. Pour seeds into water and let sit for 5 minutes. Strain and enjoy after the meal.
