The elements and qualities of the seasons and foods are the basis for Ayurveda. Fall has the elements of air and ether which are the same elements as Vata. The qualities of fall are cool, dry, rough, windy and light.

Fall Food Guidelines
Favor warm, moist, slightly oil, and building foods.
Follow this list of foods to favor:
Root vegetables such as sweet potatoes, carrots, turnips, parsnips, beets, and winter squashes.
Cooked cold-weather greens such as sea vegetables, collards, kale, and swiss chard.
Warming spices such as cinnamon, ginger, cumin, fennel, and salt.
Warm spiced cow's, almond, or goat's milk or diluted yogurt.
Raw or fresh nuts or seeds.
Rich cold-pressed oils such as sesame, ghee or avocados.
Moist grains such as wheat, brown rice, and oats cooked with a little extra water.
Sweet and heavy fruits such as bananas and mango's, apples, pears, and cranberries (early fall).
Proteins from small legumes, such as red lentils, mung beans, split peas, and adzuki beans. Tofu, eggs and most meats for non-vegetarians.
Foods To Reduce:
Dry foods such as chips and crackers.
Coffee and other forms of caffeine.
Carbonated drinks, including bubbly or seltzer water.
Large beans (cannellini, kidney, pinto) which may cause gas.
Raw foods.
